Refreshing Watermelon And Feta Salad To Beat The Summer Heat

Ingredients

• 4 cups of chilled watermelon, cut into cubes
• 200g of feta cheese, crumbled or cubed
• 1 small red onion, thinly sliced
• 1 handful of fresh mint leaves, torn
• Juice of one lime
• 1-2 extra virgin olive oils
• Freshly ground black pepper, to taste
• Option if you like a bit of a kick – add some chilli flakes or balsamic vinegar to garnish
