Lemon-Garlic Grilled Sea Bass With Herby Couscous

Ingredients

• 2x whole sea bass, cleaned and butterflied, or use fillets if preferred
• 2 cloves of garlic, minced
• 1x juice of lemon
• 1 tbsp olive oil
• Salt & pepper
• Fresh parsley or thyme sprigs
• Lemon slices, for grilling
• For the Herby Couscous
• 1 cup couscous
• 1 cup boiling water or, if preferred, vegetable stock
• 1 tbsp olive oil
• 1/2 lemon juice
• 2 tbsp fresh herbs (parsley, mint, or finely chopped basil)
• Salt & pepper
• Optional: Chopped cherry tomatoes or cucumber for freshness
